Miyagi Prefecture: Rich in Chinese Culinary Ingredients
Miyagi Prefecture is home to three of the five great dried ingredients of Chinese cuisine—shark fin, dried abalone, and dried sea cucumber—making it a region exceptionally rich in Chinese culinary ingredients. At KUROMORI, we work with local farmers to grow Chinese vegetables in Miyagi, one of which is Miyagi-grown Cantonese napa cabbage (Cantonese pak choi).
This Cantonese napa cabbage is small enough to fit in the palm of your hand. Larger ones are carefully prepared and dried. Extra-large cabbages are halved so they can be hung, then boiled and dried one by one with care.
Miyagi-grown Cantonese napa cabbage has wonderful aroma and flavor, and remains delicious even when dried. It is an essential ingredient in KUROMORI’s medicinal soups—truly an irreplaceable vegetable.
