“Tome Homare Yamadori Chicken” and “Kakuda Saito Pork”

In our search for truly exceptional chicken from Miyagi, we arrived at a simple conclusion: we would create KUROMORI’s own chicken.
Working hand in hand with a dedicated poultry farmer and overcoming many challenges together, we developed what is now known as Tome Homare Yamadori Chicken.

The name Yamadori comes from the producer’s childhood memory of the deep, savory flavor of the yamadori (Japanese copper pheasant) he once ate, and it naturally reflects the character of the chicken. All chicks that hatch are sourced exclusively by KUROMORI.

As for pork, after a long search we discovered Kakuda Saito Pork. Beyond its excellent flavor, I was drawn to the producer’s philosophy and have continued working with them since my days in Sendai. Great care is taken with the barn environment to reduce stress, raising pigs with the belief that their well-being leads to better flavor. This way of thinking is something I truly admire—and it is clearly expressed in the taste.

Each day, I cook with the belief that the stories behind the ingredients, though invisible on the plate, are what truly matter.
